I suspect the use of Autoselect may have been the issue, as I've found the less you change with B&G (once it's stable) the better off you are, and the more follow-on problems avoided. This includes software updates, which have previously caused me no end of grief.
When I change a device or source, I set things up manually after carefully reviewing how the system was set up previously and follow my tracks.
Given that the data on the wind speed is accurate (when looking at sources), it's likely not properly selected as a source.
My 505 is spec'd similarly to yours, Zeus 2 circa 2016, with 4 H5000s etc.
I'd recommend working from the MFDs, go into settings, then network, then sources, and go through every 'indicator' and make sure it is sourced correctly and assure it is the same on all three MFD's (it should be but strange things sometimes happen). It sounds to me like Autoselect made ill-advised source choices. If you have your old settings around, I'd replicate them.
If not, in general, I've found that things like Boat Speed (and the similarly named Speed Log) need to be sourced from your DST 800 or 810, and most everything else that requires a calculation (for example, TWS, AWS, TWD, COG etc) should be sourced from the H5000. I've had different sources for Heading, and it continues to be occasionally problematic. (Presently it is sourced from the H5000 but it's wonky once in awhile). AWA is sourced directly from the wind vane, as I recall.
I believe the H5000 units also allow you select sources from those displays - but I've not tampered with these settings much. It's unclear to me if the MFD displays supersede the H5000 selected sources, or if these are some linked.
I have a rule on my boat that no one tinkers with sources, ever.
If you'd like I'd be happy to follow up with all my settings but I'm not presently aboard.
